Here at Tumbleroot, we make all of our spirits by hand using 100% organic ingredients. Yes, we’re gluttons for punishment, and we tend to do everything the hard way. Also, we’re honest to a fault, so we would never describe our products as “craft” or “hand-crafted” unless we really made them ourselves in a traditional way using only the best ingredients. From scratch. All of our spirits are distilled and aged in our brewhouse following long-standing methods, starting with the fermentation of 100% organic basic ingredients and finishing with pure New Mexico mountain spring water. When flavoring our spirits after distillation, we use only organic, garden grown, and wild harvested ingredients. This is true of our packaged products as well as the infusions we create and serve in our tap rooms. When creating our artisanal elixirs, we cut no corners and spare no expense, and this is why we’re proud to call them truly crafted spirits.
All of Tumbleroot’s vodkas are distilled in our custom-built, 20-plate vodka still. This creates a distillate of very high purity (over 190 proof), which is then diluted with high desert, mountain spring water. Unlike many American vodkas, ours are never filtered. We prefer to allow the subtle flavors of our organic ingredients to add character and complexity to these spirits.
We make all our gins by starting with the same process used for our grain vodka, then adding an infusion step. Just as the purified vapors pass from the still, the distillate is diverted through a gin basket that’s packed with wild harvested New Mexico juniper berries, herbs, spices, fresh citrus zest, and botanicals (all of which are organic, and most of which are harvested from the brewer’s own garden, mind you).
Our rums are made with organic evaporated cane juice and organic molasses. We open ferment our rum with ale yeast to develop complex, fruity flavors.
Since the term “tequila” cannot be used unless a product is made in Mexico, we use the name “agave spirit” to describe ours, which is made with 100% organic blue agave nectar. Distilled through our whisky column to allow more flavor to pass through the still, we age these spirits to achieve a mellow smoothness that’s balanced with spice. (Listen, can we be honest? That aging process can sometimes be a real challenge. Mainly because we hate to wait. Like even for a bus or something. An important phone call.
