Aged in a French red wine barrel for over 14 months with a single strain of souring bacteria, Lactobacillus Brevis, and a single strain of “wild yeast”, Brettanomyces Bruxellensis I, this mixed fermentation farmhouse style ale is similar to a Flanders red ale and is a beer for wine lovers. With flavors of cherries and leather, vanilla, cedar and spice, this beer expresses only a mild funk and a pleasant acidity. The fruited versions, cherry and raspberry, ferment for an additional 2-3 months on fruit. Bottle conditioned for an additional 6 weeks, the first in our sour series is an effervescent treat that is best savored as a compliment to a meal. Perfect with a simple salad with a tangy vinaigrette, fatty grilled meats, creamy, strong flavored cheeses, and tart desserts alike.
